The Nutritional and Historical Significance of Chickpeas

Chickpeas are a versatile legume with a rich history and numerous health benefits. They come in various colors, including yellow, green, red, and black, and are divided into two main types: the light-seeded kabuli type and the smaller, darker desi type. These legumes have been cultivated for thousands of years, with archaeological evidence dating back to 7500 years ago in the Middle East.

In ancient times, chickpeas were not only a food source but also held symbolic significance. They were associated with Venus, the Roman goddess of love and fertility, and were believed to enhance sperm, milk, and urine production—particularly for the relief of kidney stones. Additionally, they were used as a coffee substitute when roasted.

Beyond their culinary uses, chickpea plants had medicinal applications. Historically, the leaves, stems, and pods were grown to extract acids, which were collected by spreading muslin over the crops at night. These acids were used for various purposes, such as treating bronchitis, mucus build-up, cholera, and even snakebites.

Chickpeas were also used to expel parasitic worms from the body and treat blood disorders and biliousness (liver or gall bladder-related conditions).

Nutritional Profile of Chickpeas

Chickpeas are packed with essential nutrients. They contain dietary bioactives like phytic acids, sterols, tannins, carotenoids, and polyphenols, including isoflavones. Compared to other legumes, they have lower levels of trypsin and chymotrypsin inhibitors, making them more digestible and nutritious.

They are high in protein, dietary fibre, resistant starches, polyunsaturated fatty acids, vitamins A, E, and C, folate, magnesium, potassium, and iron. Their nutrient profile is similar to both vegetables and protein foods, allowing them to fulfill the requirements of both food groups.

Cooked chickpeas are composed of 60% water, 9% protein, and 3% fat, with 75% of the fat being unsaturated, mainly linoleic acid. Soaking and cooking can improve protein quality and digestibility while reducing sugars and increasing fibre. Germination further enhances protein digestibility without compromising water-soluble minerals and B vitamins.

A 100g serving of chickpeas meets the recommended daily value of iron and zinc in an 8400kJ diet, while 200g provides the daily requirement for magnesium.

Culinary Uses and Health Benefits

Chickpeas are used in a variety of ways in the culinary world, including as cooked legumes, flour, popped like popcorn, boiled, baked, or fried. The most popular preparation is hummus, where they are cooked, ground into a paste, and mixed with tahini, olive oil, lemon juice, and spices. They can also be preserved in syrup as sweets or used to make aquafaba, a meringue alternative to egg whites.

Studies show that consuming chickpeas or hummus twice a week improves nutrient scores, including higher levels of dietary fibre, PUFAs, vitamins A, C, and E, folate, magnesium, potassium, and iron. Four tablespoons of hummus provide the equivalent of two cups of legumes and vegetables per week.

Weight Management

Diets high in fibre, low in energy density, with a low GI, and moderate protein are key to weight control. Regular consumers of chickpeas were found to be 53% less likely to be obese and 51% less likely to have elevated glucose levels compared to non-consumers. They also had lower BMI and waist circumference.

Glucose & Insulin Response

With a low GI of 15–28, chickpeas help manage blood sugar levels. In a 20-week study, chickpeas improved glycaemic control in subjects with cardiovascular disease. They also enhance insulin resistance and reduce the risk of type 2 diabetes.

Cardiovascular Disease

Consuming chickpeas has been linked to reduced total serum cholesterol and LDL levels. A high-chickpea diet also lowers systolic blood pressure and improves visceral adiposity, reducing cardiovascular risk factors.

Gastrointestinal System

Human studies indicate that chickpeas improve bowel health and normalize bowel movements. Adding 1.5 cups of chickpeas weekly leads to significant nutritional improvements, with hummus consumers showing better scores for nutrients from vegetables and whole grains.
